"Be passionate about your work, enjoy your work, and surround yourself with those that inspire you."
-Chef Colin Roche
Johnson & Wales University

Growing up in Wyoming County, the heart of New York's dairy & farming industry; I have a real appreciation of fresh food products. Growing up in my families restaurants and on their farms sparked a passion for where our food comes from.  My dedication to sourcing and using the best fresh and local products is shown through my food.  I'm also a musician, playing guitar, keys and providing vocals in a local band, Rhythm Collision.

I went to culinary school at Johnson & Wales University in North Miami, after graduating from Perry High School in 2006. I took the skills I learned from working in my families and other local restaurants and continued to develop them at J&W.  After culinary school, I came back to Western New York and opened a catering business, and worked as a bartender and sous chef in a couple of local restaurants.  As well as opening up a music store and starting the band with my brother.

In 2014, I moved to Knoxville, Tennessee and became the Executive Chef at a downtown hotel that was owned by Peyton Manning.  From there I went on tour with the rock band, Van Halen as the tour chef, as well as working for several other bands.  Traveling around the country cooking for musicians combined my passion for music and food. In 2016, I started working for Latina Boulevard Foods, learning the wholesale distribution side of the restaurant business, as well as continuing to operate Old Souls Catering.

Now, in 2019, I am excited to start sharing my life through my blog and on my YouTube channel. Also, to expand my catering business, as well as add consulting & mystery shop services, teaching cooking lessons, and safety training!
