Sometimes you have to draw inspiration from family recipes as a chef. So, for this one, I'm borrowing my favorite cupcake recipe passed down to me from my Mom, which originally was my late Grandma Carol's. These were my absolute favorite cupcakes growing up, and I still love to make them several times a year now.
This recipe makes about 20-24 cupcakes.
Preheat oven to 350 degrees, bake time 20-22 minutes.
What you'll need:
Cream Cheese Filling:
8 ounces softened cream cheese
1/3 cup sugar
1/8 teaspoon salt
1/2 teaspoon vanilla
1 cup sugar
1/2 cup Crisco
1 teaspoon vinegar
1 teaspoon vanilla
2 tablespoons cocoa powder
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup hot water
Step One: Cream Cheese Filling
Mix together all of the ingredients, expect the chocolate chips, in a bowl. Throughly incorporating everything together, then stir in your desired amount of chocolate chips. Set this in the refrigerator until later.
Step Two: Dry & Wet Ingredients
In a separate bowl, sift your flour, cocoa powder, baking soda, baking powder, and salt together. Set aside.
Cream your crisco, egg and sugar together in a bowl, making sure it's mixed throughly. Then add the vinegar, and vanilla to the mixture and stir.
Add about 1/3 of your dry ingredients and about 1/3 of your hot water to the wet ingredients and mix, and then again with another 1/3 of each, then add the final 1/3 of each and ensuring it's completely mixed together, with no clumps of flour.
Step Three: Filling the Cups
In your cupcake tray, put in your papers and fill each cup about halfway up with the chocolate batter. Then spoon in a heaping tablespoon of the cream cheese filling, pushing it down into the batter.
Step Four: Baking
In your oven, preheated to 350 degrees, place your cupcake tray and bake about 20 minutes or until a toothpick comes out clean.
