
Baked Tilapia with Pineapple Salsa over Quinoa

Tilapia:
Use fresh or thawed tilapia filets. Season fish with salt, pepper, Tajin & extra virgin olive oil on both sides. Bake at 400℉ for 8-10, until 145℉.
Quinoa:
-1/2 cup Quinoa
-1 cup Water or vegetable/fish stock
-2 cloves garlic, smashed
-1 tsp Kosher Salt
Bring to boil, then simmer for 20 minutes, or until all water has been absorbed.
Next sauté diced peppers & onions until translucent. Then add cooked quinoa to the pan and season with salt, pepper and fresh squeezed lime juice to taste.
Pineapple Salsa:
-1/4 Pineapple, diced
-1/4 Red onion, diced
-Diced peppers (variety)
-1/2 Lime, for juice
-2 TBS apple cider vinegar
-Cilantro
Mix together and season as needed with salt & pepper.
